Aramark Ireland announces 2022 Healthcare Leader of the Year

Nora O’Malley of Lettermore Co. Galway has been named Aramark Ireland’s 2022 Healthcare Leader of the Year.


A total of six of Aramark’s healthcare chefs competed in a live cooking competition, which took place at the Unilver Chefmanship Center in Dublin. Finalists included Roman Borowski, Mayo University Hospital, Himat Singh, Atlantic Technical University, Nora O’Malley, Áras Ronáin Inishmore, Antonia Ciera Ramos, University Hospital Galway, Krzysztof Stefanski and Elizabeth Olusona, both from Royal Hospital Donnybrook.

To mark Celiac Awareness Week, which runs from May 9-15, finalists were challenged to prepare, cook and present two servings of a gluten-free dish. The winning dish, created by Nora O’Malley, was a deconstructed mikado, made with coconut crumbs, raspberry marshmallow and raspberry jelly.

The judging panel was made up of three judges – Derek Reilly, Culinary Director of Aramark, Frances Buckley, from the Celiac Society of Ireland, and the head judge was Audrey Crone, Executive Chef at Unilver Food Solutions.

O’Malley said: “I’m delighted to have been named Aramark’s 2022 Healthcare Chef of the Year. This is the first culinary competition I’ve entered, so coming away with a win is a moment. pride for me. I’d like to congratulate my fellow competitors, who cooked amazing dishes that day. A very big thank you to the entire Aramark team for organizing a great event.

Derek Reilly, Culinary Director of Aramark, said: “This year our Healthcare Chef of the Year competition coincided with Celiac Disease Awareness Week in Ireland, which had a big influence on the regulation Our health chefs are regularly required to modify their dishes for specific dietary requirements, so we thought this competition was the perfect opportunity for our finalists to put those skills to the test.

“I am extremely proud of all the finalists who showed genuine passion, enthusiasm and energy during the final, while being diligent in their strict hygiene practices. I would like to thank Unilever Food Solutions and the Celiac Society of Ireland for their involvement, and a special thank you to Frances and Audrey for accompanying us that day to judge the dishes.”
