Pumpkin Fluffy Buns Recipe: Fall Baking At Its Finest | Bread/Muffins | Video

Recipes that use ingredients in new ways excite the cook in me. This Pumpkin Bun Recipe from Savor Easy is a fun way to use up pumpkin this Thanksgiving and fall season.

If you can’t find fresh pumpkin, you can substitute an equal amount of canned pumpkin puree. What a creative addition to your Thanksgiving table!

Servings: Makes 16 rolls


  • 3/4 cup plus 1 tbsp milk
  • 1/4 cup granulated sugar
  • 3/4 cup pumpkin puree
  • 3 1/2 cups all-purpose flour (plus more for the counter)
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon of salt
  • 1 teaspoon of cinnamon
  • 1/3 cup unsalted butter, softened
  • 2 tablespoons oil (for the bowl)
  • egg wash (1 egg plus 2 tablespoons milk)

Here’s how to do it:

  1. Boil fresh pumpkin cut into cubes until tender. Mash potatoes.
  2. Combine milk, sugar and pumpkin puree in a bowl. Whisk until combined.
  3. Add flour, baking powder, salt and cinnamon. Mix until a paste forms. Cover with a towel and let rest for 20 minutes.
  4. Mix the butter. Transfer the dough to a floured work surface.
  5. Knead the dough until smooth, about 10 minutes. Form the dough into a ball. Place in an oiled bowl. Cover with a damp cloth and let stand for about 1 hour or until doubled in size.
  6. Degas the dough and form a ball. Divide the dough into 16 pieces. Shape each piece into a ball. Place the balls in a 9 x 9 inch baking dish lined with parchment paper. Cover and let them rest for 30 minutes.
  7. Brush rolls with egg wash. Bake in preheated 350 degree F oven for about 20 to 22 minutes. Brush with melted butter.
